In the United States, cooks have been making economical candies with caramelized sugar and water since the 17th century, but it wasn’t until 1850 that someone discovered that adding dairy ingredients to the cooked sugar produces soft, chewy candy. The Hilliards family perfected their own unique and now famous caramel recipe in the 1920’s.
